Oreo Cupcakes

Over a year ago I made some seriously delicious Oreo cupcakes however I haven’t had a chance to make them again until recently and they did not disappoint! These cupcakes are super delicious!!
Makes around 24-36 cupcakes
For the cupcakes
1 box of triple chocolate cake mix
1 cup of vegetable oil
1 larger size box of unprepared chocolate pudding
1 cup sour cream
4 eggs
1/2 cup of water
About a cup semi-sweet chocolate chips
about 6 very chopped Oreos
1 box of either Oreos or Oreo thins if you would like to place one inside the cupcake or use for decoration on top.
For the frosting
1 package of cream cheese, 8oz. at room temp.
4 cups powder sugar
1 Tbsp vanilla
1 container of Cool Whip, 8oz. thawed
1. Preheat oven to 350 degrees
2. Mix together the cake mix, oil, unprepared pudding, sour cream, eggs, and water.  Then add in chocolate chips and finely chopped Oreos.
3. Optional: IF you want to bake an oreo INSIDE your cupcake, add a small scoop of mix into the cupcake liner, add Oreo (push down a little), add more mix on top.
4. Fill liners about 2/3 of the way full.
5. Bake in cupcake liners for about 18 mins.
6. While the cupcakes cool, make the frosting.
7. Beat the cream cheese and vanilla together until smooth and fluffy.  Slowly add in the sugar while continuing to mix the cream cheese mixture.
8. On a low speed, add in the cool whip.
9. You may need to allow the frosting to set up in the refrigerator while the cupcakes continue to cool.  Make sure the cupcake are all the way cool before adding frosting.
10. Put your frosting in a pastry bag.
11. Then frost the cupcakes like normal and sprinkle with crushed Oreo.
12. If you’d like, stick a piece of leftover Oreo in the frosting, for a little flair and extra cookie goodness.
BONUS: If you want a little frosting in the middle, and didn’t add an Oreo in the middle you can stick the point of the pastry bag into the cupcake and squeeze a little frosting into the center before frosting the top.  You will see the cupcake puff up.
Some side notes:
  • the frosting can turn out a little runny. I try to make it with everything pretty cold but still it isn’t super thick. You could try adding more powder sugar to thicken it. I may try this next time.
  • I made my cupcakes the day before, and the frosting the day of.
  • I stored the cupcakes in the refrigerator once they were frosted to make sure the frosting held up (not sure this was necessary or not).
  • This can be made as a cake as well! My first time making it I made 12 cupcakes and a 9×9 cake with the extra. Super yummy!
  • I had a lot of leftover frosting.

Cleaning and a baby shower!

Well nesting has officially begun! I am in super baby prep mode. With one month to the due date I just can’t seem to sit still anymore. So I spent a lot of my weekend cleaning!


Joe and I both worked. When we got home we were all pretty exhausted and had a relaxing evening. I didn’t even take any pictures!


Joe was off on an all day elk hunt with his dad and brother bright and early. It was a mommy and Liam day!

I always start my Saturday with my sweat circuit. This meant Liam was off to Grandma Terri and Grandpa Mike’s for a few hours in the morning. I was exhausted after exercising but it felt great to get it in and done!


After picking Liam up and getting home we were both ready for our morning smoothies. He just loves his and I am so thankful to know he is getting super good nutrition in the morning.  Liam was all about the snuggles and a movie so that is exactly what we did. The weather was gloomy so it was the perfect day to curl up on the couch.

After lunch it was nap time for Liam and power clean/baby prep time for me. I hustled and bustled around the house like a crazy person. I cleaned the kitchen and dining room quite thoroughly. I did lots of laundry for Liam and baby. I packed my hospital bag with almost everything I want to bring to the hospital. I found these adorable hats for the baby that I will be bringing to the hospital. They are so tiny!


Liam ended up taking a 3 hour nap which means I got a lot done around the house and for baby and it felt really good. I am getting so anxious about having things ready so having that time to myself to just power clean/prep was so helpful!

After Liam woke up Grandma Mary came over to play for a little while. Liam had fun alternating between coloring and playing hockey.


Once Grandma Mary left we headed back to Grandma Terri and Grandpa Mike’s for dinner.  Liam was so happy to see Uncle Blake was home. He also enjoyed watching some dirt bike racing with “Bumpa Mite.”

After dinner we hustled home and into the bath. Shortly after we got home Joe got home too. Liam was excited to see his daddy.

After a busy day for the both of us we had no energy to do much of anything after Liam went to sleep and ended up going to bed shortly after.


We all slept in and actually Liam is the one who was up first. We had a lazy morning and Liam and I had some snapchat fun.

Then we ended up going to breakfast with Grandma Mary and Grandpa Jon. I had a huge pancake and it was delicious!


As soon as we got home it was time for me to make the drive to my bestie Breanna’s baby shower. The decorations were super cute!

I just love baby showers! It so fun to catch up with other people. The games are usually fun and the gifts are all so cute!

She got some pretty adorable clothes for her baby girl.


I’m so excited to be doing pregnancy with this sweet friend of mine and can’t wait for her to join me in motherhood and share tips, advice, and frustrations with one another (and possibly 2am nursing/can’t sleep texts).


After the shower I went home to see my boys! Liam was so happy I brought him home a cupcake. What a cutie!


We spent the rest of the evening playing and relaxing.


Look at Liam kicked back watching his movie with two of his favorite blankies. He is so funny!

After Liam went to bed I wrapped up the evening reviewing my new pump I got through my insurance. It looks awesome! I sanitized all the parts and am all ready to start pumping once baby is here!

Then it was off to bed for me and Joe to get some rest for the work week ahead.

Friends and family weekend!

We got to spend our weekend with so many of my favorite people! Such a fun weekend!


I had the day off Friday so I started my morning with a nice workout. Things are getting more challenging but I always feel good doing something and taking care of my body.


Then the rest of the morning was filled with snuggles from my little man and play time. We also went to the store to get groceries and some other odds and ends we needed.

I had to take advantage of nap time and actually be productive. I made cupcakes, rice krispy treats, and painted Liam’s table with chalk paint. After all of that I still had some time to take a little nap.

When Joe got home we decided to make the trip to Fawn-Doe-Rose wildlife park. Liam had so much fun! He was able to feed a cute little fawn.

Liam also fed a little goat and got to see a bunch of big goats. When they starting making noises at him he said “I no like that.”

He also fed a few “big bucks” and helped mommy feed  a doe. It was so fun watching Liam run around and get excited to see all the animals.

After we decided to go to my parent’s house for pizza and corn on the cob. It was a relaxing evening there and Liam loves playing with all grandma and grandpa’s toys.

Then we headed home to put Liam to bed and go to bed early ourselves. We were both tired.


I got to wake up and get some Liam snuggles while Joe was at the gym. Then it was my turn to head to sweat circuit and get a good workout in. While I was gone Joe took Liam to Cabela’s.


When I got home from workout the boys were still gone so it gave me some time to shower and get ready for the day.

Once they returned home it was lunch time and then nap time. I had to get to work over nap again. I had to make the frosting for the cupcakes I made Friday and then frost and decorate them for a Diaper party later. They turned out really great (and delicious too)!


Then we picked up our friend’s Shawna and Rudy and headed to Breanna and TJ’s diaper party for their little baby girl. It was Liam’s first trip being forward facing. I know a lot of people have a lot of opinions on the correct age/weight to flip your child around but after reading our carseat instructions it stated we were OVERDUE to flip him! So we did it right away. He is still rear-facing in my vehicle as it is a different carseat.


It was fun to get together with everyone and just hang out. Liam had fun hanging with the boys. Breanna and I had to take a bump picture together. Can’t wait for our babies to play and grow together.

Then we brought Shawna and Rudy home and headed home ourselves. It was a little later than Liam normally goes to bed so he was tired and fell asleep very quickly.


Joe and I were exhausted as well. So again off to bed we went.


Liam slept in and so did I. Joe went off to do a 3D hunt with his friend Cole. When we woke up we had some cuddle time but then Liam was ready to play.


We colored with chalk on his “new” table and he loved it!

We also played outside since it was nice out. Liam loves riding his bike.


Once Joe got home I was off to meet my friend Jenna in Stillwater for pedicures and lunch. We went to nacho mama’s and had some virgin margaritas, guacamole, and tacos. It was super yummy!

It was so good to catch up with this mama to be and can’t wait to meet her little one.


Once I got home I was able to take a quick nap while Liam was still napping. I was so tired from a busy morning. It doesn’t take much these days to get me feeling tired.

Once Liam was up we had some playtime outside and splashed in the water. It ended up being super hot out!

Joe’s mom stopped by to play with Liam for a little bit. Marley got a little jealous and had to get in on the action.

I suddenly got the urge to deep clean one of our bathrooms (nesting?). I power cleaned that while Joe worked on dinner. It felt good to get that done.

After dinner it was snuggle and movie time and then bedtime for Liam. Aren’t my boys so cute?!?


We hung out for a little while after Liam went down but then called it a night ourselves.

10 year class reunion and Peterson wedding

Another great weekend in the books. We weren’t extremely productive but it was nice to have a little down time.


Joe and I both worked during the day. After work Joe, Liam, and I met up with my friends Breanna and Jordan and Jordan’s husband Jesse. We went to Rusty’s for dinner. We ended up waiting a really long time to get a table and by the time we got our table we had already ordered our food and began eating at the bar. We ordered Liam’s food even earlier because he was getting really hungry. They ended up giving us free drinks/desserts for the inconvenience.

After dinner I said goodbye to Joe and Liam and headed off to my 10 year class reunion. 10 years?!? Where has the time gone??? It was fun to see people I haven’t seen in a while and chat and hang out. It was super low key. We didn’t have the best attendance for a class of just over 200 people but it was still fun. Hopefully more people will come to 15 years!


I started my morning off with a sweat circuit. It was a tough one but it was good. I love my Saturday morning workouts!

When I got home we spent some time outside. It was a beautiful morning. Liam loves watching Joe shoot his bow and arrow so he did that while I lounged.

Then Liam decided he wanted to swing. He likes that I have a swing right next to his and makes me sit and swing next to him. He kept yelling “Daddy! See me daddy?!” until Joe came over and sat with us.

During Liam’s nap it was crunch time to get ready for a wedding we had to attend that evening. My dress options are limited these days but I found this black maternity one that looked really nice!

Once Liam was awake (we had to wake him up) we brought him to our neighbor’s house to play until my mom could pick him up later. They played outside and looked like they had a lot of fun together.

Then we were off to the wedding of Joe’s friend Rod and his soon to be wife Katie. The wedding ceremony was short, sweet, and HOT! We were in the direct sunlight and it was toasty. However the bride was absolutely beautiful and you could really see the love they shared with each other. So cute! Congratulations to Mr. and Mrs. Peterson!

They had a break in between the ceremony and the reception so we went to get some appetizers with Joe’s friends and recently newlyweds Colin and Emily. It was so nice to catch up with them and spend some time with them. Then we returned to the reception for dinner and dessert. They had these yummy caramel filled cupcakes. We hung out for a little while longer but decided to call it a night early. We hustled home before Liam went to bed and chatted with my mom a little while too.


It was nice to be home a little earlier and I was really tired so I was glad to just kick back and relax.


The morning started off super lazy but then we decided to go for a family walk. It was so nice to get outside and get moving because I could tell it was going to be a lazy day. After our walk we played outside for a while. Liam wanted to ride his bike so Joe and I took turns pushing. Then he wanted to draw with chalk. He always makes me draw him a bunny and lately I’ve been drawing boats. He is now scribbling and calling his pictures certain things also. It’s super cute. He gets so excited to show us.


Then it was play time inside, lunch, and then nap time for Liam. It also was nap time for me because I didn’t sleep well the night prior and also stopped drinking coffee (baby was disagreeing with it). I took a much needed nap and then got up when Liam did. He woke up super sad and wanted snuggles so that’s what we all did.

Then we did play time inside and outside again. Liam found his golf club so we had to practice golfing.

It was a lazy evening again which we all were okay with.

A bridal shower and a big boy room!

We had a good but busy weekend! It ended up flying by but we accomplished a lot which is great!


Joe and I both worked during the day and then we all spent the evening together. Our evening wasn’t too eventful but we did spend some time playing and relaxing after the work week.


I started my morning with a my sweat circuit at Snap. It always feels good to get it done in the morning and on the weekend! Another member and I took a “happy we are done” selfie post workout. So sweaty!


Then it was to Farm and Home to get some paint for Liam’s big boy room we were going to work on this weekend. I got all the supplies and then headed home.

Once I got home I had to hustle and shower and get ready for Joe’s cousin Natalie’s bridal shower brunch.

There was a bridal veil competition. My group went all out with our design. We didn’t end up winning but it was fun!

While I was at the shower Joe cleaned and taped Liam’s new room while Liam napped.

After the shower I picked Liam up so Joe could go for a run. We went back to Joe’s parent’s house to hang by the pool for a little bit.


Then it was back home for dinner and some rest after a busy day.

After Liam went to bed my mom and I did a first coat of paint in Liam’s room. His room was already a shade of brown and I decided I wanted it a different shade. It didn’t seem necessary but after the first coat I was really pleased with the change.

Then it was off to bed. I was exhausted.


We had family time in the morning and just relaxed. Joe then ran to the store so Liam and I watched some cartoons and snuggled. He was a snuggle bug and I loved it.


It was a fairly uneventful morning. At Liam’s nap time my mom came over to finish the second coat of paint in Liam’s room. Joe put Liam’s bed together during that time as well. We had a short amount of time to get a lot done but we got most of it done before Liam woke up.


Once Liam woke up he knew there was a “secret” in that room that he could see later. We went to the store to get a few groceries and when we got back I did some of the final touches in his room and we let him see it.

He loved it! He gave his version of thumbs up. So cute!


We spent the remainder of the evening playing and finishing up a few things in his room. He was excited to go to bed in his new room and new bed and we were hopeful things would go well.

He went down fairly easily and did not try to get out of his bed at all.

We watched some Netflix and then went to bed to get some rest before the work week.

It was a great and busy weekend! Hard to believe my little baby is in a toddler bed now! Hope you all have a great week ahead!
